You may be a huge fan of roast chicken, as it is quite delicious and makes for a wonderful easy dinner when you are out of ideas. It is the go-to option when you are having guests over and also when you wish to feed every hungry member of your family with little effort.
There is just one problem with this kind of recipe – it is rather messy. It is not farfetched to say that you will need to do oven cleaning after you are done the cooking if you are not careful. Roasting a chicken doesn’t have to be a problem experience though. All it takes is following the right recipe. One such recipe involves roast chicken and root vegetables.
The products you will need for it are as follows:
- Quarter cup olive oil
- Finely chopped parsley, rosemary, thyme; 1 tbsp. each
- 1 zested and juiced lemon
- Half teaspoon black pepper
- One teaspoon salt
- Quarter pound peeled carrots, halved lengthwise
- Half a pound fingerling potatoes halved
- 2 large peeled and halved shallots
- Half a cup chicken broth
- 6 cloves of garlic
- Quarter pound beets, either red or golden
Here is the cooking process you should follow:
Preheat the oven to 200 degrees Celsius. Get a small bowl and mix the olive oil, rosemary, parsley, thyme, lemon zest and juice. Pour two tablespoons of the herb oil on the skin of the chicken. You can also rub some of the mix in the cavity to add extra flavour. Season the chicken on the outside and inside with half a teaspoon salt and a quarter teaspoon black pepper. Get the lemon halves in the cavity and tie the chicken legs with some kitchen twine.
Combine carrots, potatoes, shallots, garlic cloves and beets. Use the remaining salt and pepper to season the vegetables. Place the vegetables around the chicken, single layer. Pour over the broth on the roasting pan.
It is time to roast in the heated oven for at least 15 minutes. Once that time has passed, reduce the oven degrees to 180. Every 20 minutes you should shower the chicken and vegetables with pan juices. A good indicator of how long to roast it is until its juices run clear. You can also try to move the legs – if they move easily, then it is nicely roasted. It usually takes about an hour and thirty minutes to two hours. Once that time has passed, remove the chicken from the oven and let it sit for 10-15 minutes before you serve.
